Until mid-November foodies can enjoy fine dining at the Zuidas in Amsterdam at the RIJKS POP UP restaurant. While the distinctive RIJKS Restaurant at the Rijksmuseum is remodelled, chef Joris Bijdendijk leads his pop-up establishment with the same approach: giving Dutch cuisine a fresh twist, using only the best ingredients.
RIJKS Pop up Amsterdam – all you need to know
We love pop-up restaurants. The atmosphere is always vibrant, guests go the extra mile (after all, it’s a one-time experience), and chefs pull out all the stops. This is true for Joris Bijdendijk and his team as well, who view their temporary restaurant as a culinary playground with a sustainable purpose. He explains: ‘It’s about more than just great ingredients; we must also advance Dutch gastronomy in the long term. That’s why profound improvements in food and beverage production and logistics are necessary for the future of our industry and all of the Netherlands.’ The pop-up isn’t just a whim: the ‘real’ location of the RIJKS Restaurant is currently under renovation. Although the place is not a replica of the original restaurant, the chefs are taking a new direction and experimenting extensively with the pop-up.

You can savor typical RIJKS classics at the brand-new pop-up while enjoying the chefs’ new experiments. Joris Bijdendijk explains, “The POP UP may be the last chance to taste some signature dishes from the current RIJKS. We will use this temporary location to discover new products, combinations, and preparation methods with the team we’ll feature at the new RIJKS.” And so, the restaurant offers a unique preview of a flavourful future.
At this temporary location, you’re not only in the right place for an extensive dinner, as you would expect from the concept, but also for a quick bite. There’s a traditional Dutch “trekmuur” (snack wall) where you can get snacks to accompany your drinks from Tuesday to Friday.
If you want to kick off your weekend with RIJKS, there’s also the POP UP STORE, where you can pick up the tastiest ingredients for an elaborate dinner at home. Their regular suppliers are also available for the ‘ordinary person’ at this temporary shop, offering cheeses from Fromagerie L’Amuse, sourdough bread from Wils Bakery Café, and Urker TA’IM fish sauce from the North Sea. And there’s even more good news: before the renovation of RIJKS, the entire restaurant was cleared out, so the store also sells items from the restaurant, such as aprons, cookbooks, and cutting boards.
You can visit the RIJKS POP UP on the Zuidas for lunch and dinner from Tuesday to Friday, and dinner only on Saturday. During lunch, the 3-course menu can be served within an hour for those on their lunch break!
