Must try recipe: potato salad with octopus

enjoy potatoes in a different way than you are used to

Although, I’ve just returned from South-Africa, I already miss the sun. I just don’t like the grey sky, the cold wind and the rain. But I do like the sun very much :-) Therefor, I always try to bring the sun in my life, even if it’s just for a moment. How I do that? For example by cooking delicious Mediterranean meals with colorful ingredients and summery flavors. In no time, I feel like I’m on a sunny city trip. My new favorite: potato salad with octopus

You’re probably thinking: using potatoes for a summery dish? Yes, of course! Using this recipe, the potato will be easily and quickly transformed into a dish which isn’t boring at all, yum!

What you need (4 persons):

– 300g potatoes
– 400g octopus
– 2 cloves of garlic
– 1 bunch of parsley
– 1 teaspoon pimentòn (smoked paprika powder)
– 0,5 red pepper
– 0,5 lemon
– olive oil
– vinegar

Get to work!

Boil the octopus for one to an hour and a half in water with a splash of vinegar. Peel the potatoes and boil them in the same water as the octopus. Add a little salt to the water. Let the potatoes and octopus cool down. Afterwards you can fry them together in a pan with a little bit of olive oil.

Cut the garlic and red pepper and add them to the potatoes and octopus in the last five minutes. Chop the parsley and add it altogether with the pimentòn. Make it even better with a few drops of lemon juice.

Tip: Do you have little time? Buy some precooked octopus.
