VanOost Amsterdam: fine dining with international allure in Amsterdam East

The stately building alone is impressive, and we haven’t even talked about the interior of the Pillows Hotel on the Mauritskade. VanOost Amsterdam is part of it, and it takes things up a notch—not only thanks to the stunning setting but also to the unique creations of chef Floris van Straalen.

Atmosphere and Interior at VanOost Amsterdam

Upon entering VanOost Amsterdam, you are welcomed into an aperitif room (yes, the building is enormous, and they have made good use of the space). You’ll also find an open kitchen with a marble bar where you can sit for dinner. In one corner, there’s an impressive cheese cart with a selection to marvel at, and in terms of decor, every detail has been considered, with no expense spared. The fifteen-metre-high ceilings make the restaurant even more awe-inspiring. The atmosphere is relaxed, and the staff are friendly and enthusiastic about what they have to offer.

Menu and Dishes at VanOost

Chef Floris van Straalen previously cooked at Envy and Felix Meritis. Now he leads his own VanOost, where flavours from around the world come together in his kitchen. Those who think that flavours from the other side of the world are mainly served here are mistaken: the amuse-bouche with pickles from Kesbeke (an Amsterdam icon) might be the biggest hit among the amuse-bouches. The poached oysters also come – when possible – from local sources.

You’ll be amazed with every course – from meat to fish and vegetarian (as long as you indicate in advance). The kitchen team works with extreme precision, using tweezers, nitrogen, and ingredients so finely chopped that you wouldn’t think it was possible.

As for the menu, they offer four to six courses for lunch, and for dinner, you can choose from six to nine courses. À la carte is also an option, but if you’re there, go for the chef’s menu for the true experience.

VanOost is perfect for an extensive dinner

At VanOost, you’ll want to set aside a few hours for a memorable evening. For lunch, there’s a one-hour option if you choose four courses. The latter is suitable for a business meeting; we’d recommend going with loved ones or friends for dinner.
