Tasy traditional Dutch mashed potatoes dish with a twist!

You have probably already tasted the typical Dutch mashed potatoes before with endive, kale or even with carrots for the “hutspot”.
But did you know that you can make it another way? Today we’ll make a tradtional Dutch mashed potatoes dish with a little twist, because instead of regular potatoes we’re going to use sweet potatoes and also rucola.

Try this dish with feta cheese if you feel like going vegetarian or else go for some meatballs or a Dutch smoked sausage. I really enjoyed this dish, so I hope you will too!

Mashed Sweet Potatoes with Rucola (4 persons)

– 1,5 kg sweet potatoes;
– 100 gr rucola;
– 100 gr feta;
– 1 stock cube;
– Spanish hot pepper;
– 1 red onion;
– 1 clove of garlic;
– olive oil;
– pepper & salt;
– a little bit of butter (if felt necessary); and
– a potato masher.

This is how to cook it!

Take your rucola out of the freezer if needed and let it come back to room temperature. Peel the sweet potatoes and cut them into small cubes of about 3 by 3 cm. Peel and cut the onion and garlic into small bits (you can also use the garlic press for the garlic). Finally, cut the Spanish hot pepper as fine as possible. The more hot pepper you use, the spicier the mashed sweet potato dish gets. It really is up to you whether you want it more or less spicy, but I used half of it with some seeds). Then measure and use 500 ml hot water to dissolve the stock cube in it.

Heat up a big pan on the stove (I used a regular big frying pan). Put in some olive oil and first fry the garlic, onion and hot pepper. After about a minute, put in the diced sweet potatoes. Fry it a little bit longer and then pour some stock in the pan, just enough so that the sweet potatoes are submerged. Bring the stock to a boil and let the sweet potatoes cook for about 20 min. Prick a sweet potato after the 20 min and if it falls apart easily, it is ready to be mashed.

Take the sweet potatoes out of the stock and make sure to save some of the stock. Take a big, flat oven dish and place the sweet potatoes on it. Don’t forget to also put the onions, garlic and hot pepper on it. Pour some of the stock in it and it’s time to mash it! Taste and add some salt & pepper to your liking.

If preferred, you can now add a bit of butter to it to make the sweet mashed potato dish even more creamy. Tear the rucola in half (it will help with the shrinking) and add to the dish. Mix well and voilá, your sweet mashed potatoes with rucola is done!

Serve a good amount of the mash on a plate and top it with some feta cheese to fully complete the dish. If you still have some rucola left, you can also put some on top of the dish. And that’s how you can make a traditional Dutch mashed potatoes dish with a twist.
