When it comes to ingredients, Roux collaborates with local icons like Het Kaasatelier, Oesterij, Jamoneria by Rick, and Zagt Amsterdam. And then you know: this is a promising start.

Roux's menu is packed with classics with a modern twist. Think oysters, a wide selection of cheeses, and, of course, the highest-quality meats sourced from local vendors. The open kitchen is also the beating heart of Roux – from a seat at the bar, you can easily watch the chefs (led by Chef Evy) conjure up the most unique dishes. Fine dining in a relaxed atmosphere, you could say.
According to Roux's sommelier Allon, Champagne is the most important element of the wine list, which is why the entire team recently traveled to the Champagne region to conduct thorough research. But that's not all; the other wines and drinks on the menu have also been carefully selected. Dining at Roux becomes a complete experience and a taste sensation, so be sure to ask the staff for advice on drinks – you won't regret it.
