The list of Dutch restaurants that will receive a green Michelin star in 2025 has now been announced! The green Michelin stars were first awarded in 2021 to a handful of restaurants in the Netherlands, and the list has since expanded considerably. What exactly does a green Michelin star mean? Restaurants with a green Michelin star distinguish themselves from their culinary peers through a commendable and forward-thinking focus on sustainability. For example, they work exclusively with local suppliers, strive for zero waste, and elevate plant-based food to a higher level. Every restaurant included in the Michelin Guide is eligible for a green star, and I expect this number will only increase in the coming years due to the popularity of high-end, plant-forward cooking!

TRES 

Tres in Rotterdam is an intimate venue with a vision: they work from the surrounding region, using fermentations, reuse, and local suppliers. It's truly special, complete with a lab! Chef Michael van der Kroft creates a menu that's subtle yet powerful, with a focus on balance in flavor and the environment. To me, Tres feels like a quiet masterpiece: small in scale, big in impact. I was there for lunch last year, and it was fantastic!

Fermin

Circular working is central to Fermin, which received its first Green Michelin star in 2024. Collaboration with nature comes naturally to chef Remco van Erp, who unleashes his creativity on it; after all, why shouldn't you be able to eat scraps? At Fermin, they know how to handle it.

Flores

The ingredients at Flores in Nijmegen are sourced from local regenerative gardens and agriculture, and through fermentation, they minimize waste. Any leftovers go to the farmer around the corner, who uses them as chicken feed. "We embrace vegetables and serve carefully selected fish, meat, and poultry from the wild, such as animals from overpopulation or those that cause damage to nature," explains chef Luuk Freriks. This hasn't gone unnoticed; since 2024, this restaurant has held a Green Michelin star.

Home

Heimat is a true institution in Utrecht and the surrounding area, as few places offer such delicious, artisanal bread as here. The bright interior and cheerful atmosphere are inviting and anything but stuffy. Niels van Zijl, chef at "his" Heimat, likes to do things a little differently. Above all, he ensures every day that little is wasted in the kitchen, and combined with the unique flavors of this place, this has earned him and his team a Green Michelin Star.

Cooking Atelier in East

Texel has a Green Michelin star, thanks to Kook Atelier op Oost. True artists are in the kitchen; because who would think of filling a homemade XO sauce with plant-based substitutes for fish, shellfish and crustaceans? Thanks to the special processing of plant-based ingredients, those animal ingredients turn out to be completely unnecessary.

Morekas

In Oostermeer, Friesland, the restaurant received a Green Michelin star this year, even though it only opened last May. Mearkas is the only greenhouse restaurant in Friesland, comparable to De Kas in Amsterdam, although Mearkas has its own food forest and is largely made from residual materials. They work in complete harmony with the region, resulting in exciting combinations. To complete your experience, spend a weekend at the glamping site.

Neder

"We work with herbs and spices from the vegetable garden and the wild. With plants from sustainable pioneers in the area. Kitchen scraps are processed into seasonings. We choose wild animals, such as pests and vermin," explains Brian Luikel, chef at Neder. All ingredients are sourced locally – from mustard seeds to salt. Even the drinks are homegrown. And so, at Neder, the best of the Dutch seasons are brought to your plate.

As a native of Zeeland, I'm incredibly proud that two new Green Michelin stars have been awarded to restaurants in Walcheren this year. A historic farmhouse has been transformed into a Scandinavian-style restaurant and hotel. Located just 500 meters from the North Sea, nestled in the dunes of Dishoek, they serve Nordic-style cuisine. They have their own vegetable garden and raise their pigs at the nearby organic farm Bioduin.

De Dyck

Self-sufficient Restaurant de Dyck, located in Woubrugge, was awarded a Green Michelin Star in 2023. With common sense, Dutch common sense, and a healthy dose of stubbornness, de Dyck has chosen the only right path, not the easiest one, since it opened its doors in 2012. The foundation of this restaurant, led by talented chef Martijn Koeleman and self-sufficient year-round, is formed by the former arable farm that owner and farmer Reinier Kempenaar took over from his parents in 2003. From the beginning, his mission has been to make guests aware of all the beautiful and delicious local produce in a surprising way.

Restaurant Rotonde in Rotterdam has been on my "hit list" of restaurants I'd love to visit for a while now. So, off to Rotterdam! They were recently awarded a BIB Gourmand, and during the 2023 Michelin star ceremony, they'll be adding a Green Michelin Star to that list.

Right in the heart of Amsterdam, De Kas grows its own vegetables, herbs, and edible flowers. Harvested at the last minute, so they arrive on your plate as fresh as possible. In other words: from plant to plate! The garden is always open for those who want to savor the aroma of fresh basil, with or without a glass of wine. And what I also love about De Kas is that they're also open for lunch! It's a real treat: you start with a table full of appetizers and then enjoy a delicious menu.

The New Store

An evening meal at De Nieuwe Winkel is high on my food bucket list. This restaurant, with two Michelin stars and a Green Star, where plant-based cuisine is served, is one to keep an eye on. At De Nieuwe Winkel, they even have a word for it: botanical gastronomy. The team believes that you can offer your guests excellent, high-quality food while choosing ingredients that don't deplete the planet. Chef Emile van der Staak prefers to conceive his new dishes on a log in the food forest, where the ingredients for your dinner grow. I've been following De Nieuwe Winkel on Instagram for a while now, and the dishes look so fantastic. I'll have to go back soon to try them!
