Which restaurants in the Netherlands will receive a Green Michelin Star in 2024 is now known! The Green Michelin Stars were first awarded in 2021 to a handful of restaurants in the Netherlands, and the list has since expanded significantly. What exactly does a Green Michelin Star mean? Restaurants with a Green Michelin Star distinguish themselves from their culinary peers by having a commendable and future-oriented focus on sustainability. For example, they work exclusively with local suppliers, aim for zero waste, or elevate plant-based food to a higher level. Every restaurant listed in the Michelin Guide is eligible for a Green Star, and I expect this number to only increase in the coming years due to the popularity of plant-forward high-level cooking.

Fermin
Circular working is central at Fermin, which in 2024 received its first Green Michelin Star. Collaboration with nature is a given for chef Remco van Erp, who unleashes his creativity. Why wouldn’t you be able to eat vegetable scraps? At Fermin, they know how to handle it.

Flores
The ingredients at Flores in Nijmegen are sourced from local regenerative gardens and agriculture, and thanks to fermentation, they minimise waste. What remains is sent to the nearby farmer, who uses it as chicken feed. ‘We embrace vegetables and carefully select wild-caught fish, meat, and game, such as animals from overpopulation or those causing damage to nature,’ explains chef Luuk Freriks. It didn’t go unnoticed; since 2024, this restaurant has had a Green Michelin Star.

Heimat
Heimat is a well-known name in Utrecht and surroundings because there are few places where you can eat such delicious, artisanal bread as here. The light interior and cheerful atmosphere are inviting and anything but stiff. Niels van Zijl, chef at ‘his’ Heimat, likes to do things differently. Above all, he ensures that little is wasted in the kitchen, and combined with the unique flavours of this place, it earned him and his team a Green Michelin Star.

Kook Atelier op Oost
Texel has a Green Michelin Star, thanks to Kook Atelier op Oost. In the kitchen are true artists; because who would come up with the idea to fill a homemade XO sauce with plant-based substitutes for fish, shellfish, and crustaceans? Thanks to the unique preparation of plant-based ingredients, those animal products prove completely unnecessary.

In 2024, Lutum will receive its first Michelin Star and a Green Michelin Star! According to their Instagram reaction, the team couldn’t be more thrilled and was left speechless. They themselves call nature a ‘source of wonder’ and love to work with what’s available, exclusively from the area. They are also fans of fermentation, which appears in many of their dishes.

Mearkas
This year, in Oostermeer, Friesland, received a Green Michelin Star, although it only opened its doors this past May. Mearkas is the only greenhouse restaurant in Friesland, comparable to De Kas in Amsterdam, although Mearkas has its own food forest and is largely built from recycled materials. They work completely in harmony with the region, resulting in exciting combinations. To complete your experience, stay for a weekend on their glamping.

Neder
‘We work with herbs and spices from the vegetable garden and the wild nature, with plants from sustainable pioneers in the area. Kitchen waste is processed into flavour enhancers. We opt for wild animals, such as nuisance animals and pests,’ says Brian Luikel, chef at Neder. All ingredients come from the Netherlands – from mustard seed to salt. Even the drinks are homegrown. And this is how the best of the Dutch seasons is translated to your plate at Neder.

A bridge between the established and the future; at Vannu, they uniquely do things, and your plate looks just as unique. The ingredients come from local gardens and a nearby food forest, combined they contain flavours you’ve never tasted before.

Hof aan Zee
As a Zeeland local, I am naturally very proud that two new Green Michelin Stars were awarded to restaurants on Walcheren this year. A historic farm converted into a restaurant and hotel in Scandinavian style. Located just 500 meters from the North Sea at the foot of the Dishoek dunes, they cook in a Nordic style. They have their vegetable garden and keep their pigs at the nearby organic farm, Bioduin.

De Dyck
Self-sufficient restaurant De Dyck, located in Woubrugge, was awarded a Green Michelin Star in 2023. With common sense, Dutch straightforwardness, and a healthy dose of stubbornness, De Dyck has, since opening in 2012, consistently chosen the only right path for them, not the easiest one. The foundation of this restaurant, led by talented chef Martijn Koeleman, is formed by the former arable farm that owner and farmer Reinier Kempenaar took over from his parents in 2003. From the beginning, his mission has been to raise awareness in guests about all the beautiful and delicious things from our land in a surprising way.

Restaurant Rotonde in Rotterdam has been on my ‘hit list’ of places I want to visit for a while. Off to Rotterdam then! Recently they were already awarded a BIB Gourmand, and during the 2023 Michelin Star ceremony, they added a Green Michelin Star to their accolades.

In Koudekerke, stars are cooked in the sky at chef Dennis Willems’ restaurant. He only uses vegetables sourced from suppliers within 15 kilometres of his establishment for his dishes. Taste the best of the Zeeland soil in the fourteen-course menu!

Restaurant de Kas
In the middle of Amsterdam, De Kas grows its own vegetables, herbs, and edible flowers. Harvested at the last moment so they are as fresh as possible when they reach your plate. In other words, from plant to plate! The garden is always open for those who, with or without a glass of wine, want to breathe in the scent of fresh basil. And what I also love about De Kas is that they are open for lunch! A real treat: you start with a table full of amuse-bouches and then enjoy a delicious menu.

This restaurant, located in the heart of the Zuidas district, serves a vegetarian menu (vegan options are also available). With a ‘eat-local’ philosophy, fresh herbs and vegetables are sourced from their own garden, located next to the restaurant.

It is not a hotel or restaurant where you will stay or dine every week, but once in your lifetime, if you have something extraordinary to celebrate, it will be an experience you will often think back on. The hotel, with 19 uniquely decorated rooms, is located in the old women’s prison. Reservations must be made months in advance for a restaurant with two Michelin stars. Or book one of the packages.

Dining at De Nieuwe Winkel is high on my food bucket list. This restaurant, which has two Michelin stars and a Green Star, where plant-based cooking is the focus, is one to watch. At De Nieuwe Winkel, they even have a term for it: botanical gastronomy. The team believes you can serve high-level food while choosing ingredients that do not deplete the earth. Chef Emile van der Staak prefers to develop new dishes on a log in the food forest, where the ingredients for your dinner grow. I’ve been following De Nieuwe Winkel on Instagram for quite some time, and the dishes look absolutely fantastic. I need to return soon to taste them!

A biological restaurant in Schinnen where everything revolves around quality, taste, and a cosy atmosphere. They cook mainly organically and choose as many local products as possible. They also cook with forgotten vegetables from their own garden. Chef Jean Thoma enjoys spending time in this garden. There he finds his peace and creativity. The flavours of the past inspire the dishes at Sjuut and can be considered regional dishes, but at a high level.
