Choosing from this list is tough, so I’ll make it easy for you – call Rijsel now to see if they still have a spot! It is one of my all-time favourites with a classic French kitchen. On your plate: the softest fish soup, côte de boeuf with béarnaise sauce of your dreams, and the tastiest potatoes. And I haven’t even mentioned the wine, which is reason enough to go to Rijsel. Booking well in advance is a must!

The côte de boeuf (yes, again) is among the best I’ve ever had, but honestly, every dish was memorable. Expect lots of meat, bold flavours, and rich sauces.

A lighter option, Sjefietshe is the creation of culinary king Seger Abels and chef Rick Swinkels. This fantastic cevicheria started as a pop-up and was an instant hit. The Scandinavian-inspired interior with lots of minimalist wooden furniture and dark blue tones is reason enough to plan a visit to Sjefietshe.

After years of working together at the former Bordewijk, Giel Kaagman and Bram Kortekaas opened Kaagman & Kortekaas. The whole city fell in love with their rich menu, which emphasizes nose-to-tail cooking, origin, and seasonality. Perhaps the biggest counterpart to Kaagman & Kortekaas, Choux focuses on cooking with mainly vegetables, plants, flowers, and grains. The flavours are just as bold and, at times, even moving. I once had the best dessert of my culinary life here, made with rosehip and young goat cheese. I still dream about it…
