In the heart of the city center, tucked away in the Red Light District, you'll find a hidden gem: Mata Hari Amsterdam. The restaurant, which has been drawing crowds for years, was due for an upgrade. The owners of Helling7 and Café Verlan saw an opportunity and recently took over the business. After a minor renovation and the development of a new menu, the new Mata Hari restaurant reopened in early January. The interior still evokes late 19th-century Paris. Perfect for a night out with your loved one.

Trees

Trees Amsterdam is exactly such a place that our capital was still missing. A place with a warm, welcoming atmosphere, and a mouthwatering menu. The interior is cozy, dark, and feels like a second home. It's reminiscent of Gertrude (also from Amadou and Géza's pen), but with a different twist. A lovely place where you'd just as happily settle in with a date as with friends.

The owner of Massalia and Gitane, Angelo Kremmydas, explains that not many people know that Marseille (Massalia) was founded by the Greeks. Small dishes with lots of vegetables, complex flavors, and natural wine. That's what you can expect at Café Binnenvisser. With a delicious playlist blaring from the speakers, relaxed service, and friendly prices (a menu costs around €33,-) The perfect spot for a cozy date night. Choosing from this list will be difficult, so I recommend calling Lille now to see if they have any availability. One of my all-time favorites, with classic French cuisine. On your plate, you'll find the most tender fish soup, the beef steak with béarnaise sauce of your dreams, and the tastiest potatoes you can find. And I haven't even mentioned the wine, which alone is reason enough to visit Lille. Booking well in advance is a must!

Looking for something in Oost? Then Wilde Zwijnen is always a good choice. Because they only use local and seasonal ingredients, the menu changes regularly. Despite what their name might suggest, they serve a delicious mix of meat, fish, and vegetarian dishes.

Gebr Hartering is an Amsterdam institution. Brothers Paul and Niek Hartering cook here according to the French table d'hôte principle, with a 5- to 7-course menu every day. The côte de boeuf (there it is again) is among the most delicious I've ever eaten, but every dish was truly memorable. Expect plenty of meat, full flavors, and rich sauces.

A lot lighter is Sjefietshe from culinary king Seger Abels and JacobszChef Rick Swinkels. This fantastic cevicheria originated from the eponymous pop-up, which proved an instant success. Enjoy various types of ceviche, roasted pulpo, "leukbek 2.0," and more. The Scandinavian interior, with its simple wooden furniture and dark blue as the dominant color, is reason enough in itself to plan a visit to Sjefietshe.

After years of working together at the late Bordewijk Giel Kaagman and Bram Kortekaas opened their own restaurant, Kaagman & Kortekaas. The whole city immediately swooned over their menu of rich dishes where nose-to-tail cooking, provenance, and season play a key role. Expect lots of organ meats, deep flavors, and sauces you'll want to drink straight from the jug.

Cabbage

Perhaps the biggest counterpart to Kaagman & Kortekaas is restaurant Choux. Here, they primarily cook with vegetables, plants, flowers, and grains. As a result, the dishes are anything but lacking in flavor. Always positively surprising, and sometimes even touching. I had the best dessert of my culinary life here, made with rosehip and young goat cheese. I still dream about it…

After working in restaurants including Bordewijk, Rijsel, and Arles, hospitality talent Xander Waller and chef Arvid Schmidt opened Restaurant Entrepot on Amsterdam's unique Entrepotdok. The former billiard room was thoroughly renovated, resulting in a large, bright space with the enormous open kitchen at the back as a focal point. The menu focuses primarily on local and seasonal dishes, with extensive use of open fires.

Scheepskameel was opened by three gentlemen from restaurant Rijsel and a fourth partner, and what a great move! Classic European dishes with a strong focus on the main ingredient are the guiding principles. The menu is divided into five categories (raw, vegetarian, fish/meat, cheese, and dessert) allowing you to create your own menu. The wines are all sourced from Germany. Fantastic!
