Restaurant FYR Amsterdam is Elian Muller's first restaurant. His love for unique flavors using everyday and local ingredients led him to cook based on the elements. Water, Earth, Air, and Fire take center stage in this unique location.

Atmosphere and interior at Restaurant FYR Amsterdam
You might know owner and chef Elian Muller from his work at Vinkeles and Fosbury & Sons. At the latter, he provided the consistently excellent lunch for the flex workers there. It's a great loss that he's gone now, but an even better addition to Amsterdam East.
The name FYR is a Swedish term that represents the elements: water, earth, air, and fire. These elements are also used in their cooking, as you can't miss the large wood-fired oven upon entering. It immediately creates a pleasant atmosphere, as if you're stepping into a warm nest.
Trattoria Breda used to be located here, and the interior has been largely preserved. In this video Get a glimpse of the atmosphere. Think neutral tones and refined details that don't distract from what this restaurant excels at: serving unique flavors.

Menu and dishes at Restaurant FYR
At Restaurant FYR Amsterdam, you can choose from a four- to six-course menu. And yes, the elements are reflected in them. Water, of course, represents fish (fresh from the North Sea), Earth represents the fresh vegetables (all local!), Fire represents the aforementioned wood-fired oven, and Air represents poultry. But vegetarians can also enjoy a full menu here. Among the dishes are verjuice beurre blanc with salsify and celeriac from the wood oven.
Chef Casper, Elian's right-hand man, also bakes homemade bread in the wood-fired oven. And of course, there are matching wines, also top-quality. Wine lovers can look forward to more, because later this year a modest wine bar with around twenty wines will open on the right side of the restaurant. A terrace will also open this spring, where you can enjoy the sunshine while sipping. A place to simultaneously unwind and tantalize your taste buds.
