Recipe: Frisée and date mash

When I think of stamppot, I think of winter stamppots like endive or kale. But there are so many different types, and you can create endless variations with stamppot. That is why the *Stamppot Bijbel* from Carrera publishing house contains more than 200 different recipes. With true classics, but also innovative and surprising recipes, such as stamppot with samphire and prawns. And who says you can only eat stamppot in the winter? There are plenty of delicious summer stamppots to be found. This recipe might not be the first thing that comes to mind when you think of stamppot. Yet, the combination of frisée lettuce and dates is very tasty. Pick up nice large dates at a Turkish supermarket. These taste just a little bit better than the dates you buy at the regular supermarket. Happy cooking!

Recipe: Mashed frisee with dates

You need:
1 kg floury potatoes
1 head of frisée (lettuce)
1 bunch of fresh mint
225 g pitted dates
100 g almonds
450 g bacon, in strips
100 ml unsweetened almond milk
Salted butter
Salt and pepper

Frisee and Date Mashed Potato Recipe: How to make it

  1. Preheat the oven to 180°C.
  2. Peel and wash the potatoes, remove the seeds, and cut them into quarters. Boil the potatoes in water for 15 to 20 minutes until tender.
  3. Cut off the end of the frisée lettuce and finely chop the lettuce. Remove the mint leaves from the stems and wash them with the lettuce. Drain well.
  4. Cut the dates open and stuff each with an almond. Wrap the stuffed dates with the bacon strips and place them in a baking dish. Bake for 10 minutes, or until the bacon is brown and crispy.
  5. Drain the potatoes and mash them. Stir in the unsweetened almond milk and a knob of salted butter. Stir in the frisée and mint and season with salt and pepper. Serve the dates with the mash.
