Recipe: vegetarian salad with kale and pearl barley

Salads aren't just delicious as a side dish or main meal at home, they're also great for lunch when you're at work or out and about. But bringing all the ingredients from home or buying a ready-made salad at the supermarket just isn't as tasty as making your own homemade salad. Make a salad recipe from the cookbook the night before or the morning before you have to leave. Salad in a Jar From Anna Helm Baxter. Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). Recipe: kale & pearl barley

Suitable for: 1 litre pot
You need:
125 g cooked pearl barley (equals approx. 40 g uncooked pearl barley) with salt and pepper
175 g sweet potato, peeled, diced, oven-baked
150 g kale, veins removed, steamed, cut into pieces
85 g cherry tomatoes, halved
2-4 tablespoons cider vinaigrette
1/2 small red onion, chopped
1 tablespoon pine nuts, roasted

Additional supplies for cooking:

Kale & pearl barley recipe: How to make it

  1. Spoon the vinaigrette into a 1-liter glass jar.
  2. Add the red onion, followed by the pearl barley, sweet potato, tomatoes and steamed kale.
  3. Finally, add the pine nuts. Close the jar tightly.
