BBQ Recipe: Portobello Caprese by Julius Jaspers

How delicious is a stuffed portobello? If you love this popular meat substitute as much as I do, then you definitely want to make this barbecue recipe for portobello caprese! So simple, yet so tasty. Go to your local market for nice, large, and fresh portobellos (they are also much cheaper!). This delicious recipe comes from the cookbook Masterclass Groente op de BBQ by Julius Jaspers. Recipe: Portobello caprese

Suitable for: 6 persons
Preparation: 5 minutes
Finish: 15 minutes
Temperature: 200 °C
Fire: Direct

You need:
6 portobello mushrooms, stems removed
300 g mozzarella, cubed
1 shallot, finely chopped
1 clove garlic, grated tomato salsa
150 g Fontina, grated
10 basil leaves, chopped
150 g arugula
30 ml balsamic vinegar
60 ml olive oil
salt and pepper

Portobello Caprese Recipe: How to Make It

  1. Mix the mozzarella with the shallot, garlic and tomato salsa.
  2. Fill the portobello mushrooms with mozzarella and tomato, season with
    salt and pepper and sprinkle with Fontina.
  3. Grill the portobello mushrooms for 15 minutes until the mozzarella has melted and the Fontina has a crust.
  4. Sprinkle the portobello mushrooms with basil and serve with a handful of arugula that you have briefly dressed with some balsamic vinegar and olive oil.
