Recipe: Oven-baked lamb with pistachios and vegetables

Recipe: Lamb with pistachios and vegetables

Suitable for: 2 persons
Preparation time: preparation 10 minutes, cooking 20-30 minutes
You need:
150 g baby carrots, halved lengthwise
200 g baby courgettes, halved lengthwise
1 can of white beans (400g), washed and rinsed
1 tbsp olive oil
2 tsp sea salt
Freshly ground black pepper
350 g rack of lamb (cleaned)
2 tsp Dijon mustard
40 g pistachios, finely chopped
1 bunch of fresh mint, leaves finely chopped
Juice of ½ lemon
1 el extra virgin olive oil

Additional supplies for cooking:
Roasting pan
Sharp knife

Lamb with pistachios and vegetables: how to make it

  1. Preheat the oven to 180°C (350°F). Place the vegetables, beans, olive oil, 1 teaspoon of sea salt, and a generous pinch of black pepper in a roasting pan and stir well.
  2. Rub the rack of lamb with the remaining sea salt and place it on top of the vegetables
    Spread the mustard on the top and sides. Evenly distribute the pistachios over the top and press gently. Bake for 20-30 minutes, depending on how cooked you like the lamb chops (I prefer 25 minutes).
  3. Remove the rack of lamb from the roasting pan and let it rest on a cutting board for 10 minutes. This is crucial for the texture, so don't skip this step. Meanwhile, garnish the vegetables with the mint, lemon juice, and extra virgin olive oil. Taste and adjust the seasoning if necessary.
  4. Carve the rack of lamb into neat medallions (cutting at a slight angle between the bones). Use a sharp knife to do this. Place them on top of the vegetables in the roasting pan. Pour any juices from the cutting board over the lamb chops and serve immediately.
