Recipe: French-style lobster with tarragon butter

We're shouting "OUI" to French cuisine. Because from crispy baguettes to spiced escargots, quiche Lorraine, and a good steak tartare, we can't get enough. And we haven't even mentioned the sweet treats found everywhere in France. Mmmm! My mouth is watering just thinking about macarons. the Bible of French cuisine Chef Alain Caron takes you on a culinary tour of French cuisine. He shows you how to make the most delicious dishes at home, including this delicious lobster and tarragon butter dish. Quintessentially French and a real showpiece to serve to your guests. Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. Of their grandmother's farm, of the flavors of their youth in Germany, and of techniques passed down through generations. @relaischateaux invited me to experience Sühring during a solo lunch, and this is truly my ultimate definition of culinary self-care. This was a surprising afternoon in Bangkok, where I ate the best German food I have ever tasted. And that in a city where I normally avoid European restaurants. Recipe: Lobster with tarragon butter

Suitable for: 4 persons
You need:
2 lobsters of approximately 500 g
150 g butter, at room temperature
16 sprigs of tarragon, leaves picked and finely chopped
1 lemon, juice
Fleur de sel and white pepper

Additional supplies for cooking:

Lobster with Tarragon Butter Recipe: How to Make It

  1. Before cooking, place live lobsters in the freezer for 30 minutes to stun them.
  2. Preheat the oven to 180°C.
  3. Prepare a bowl of ice-cold water and bring a large pot of salted water to a boil. Boil one lobster for 4 minutes, then briefly submerge it in the ice-cold water and drain. Bring the water back to a boil and repeat with the other lobster. Remove the claws from both lobsters and boil them for another 2 minutes. Cool them again in ice-cold water.
  4. Cut the lobsters lengthwise. Remove the grayish-green stomach pouch from the head and pull out the grayish-green thread from the tail.
