Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). Recipe: Celeriac and parsley soup

Suitable for: 4-6 persons
You need:
2 tbsp olive or rapeseed oil
1 medium onion, chopped
2 cloves garlic, finely chopped
4 stalks of celery, thinly sliced
½-1 medium celeriac (about 500 g), peeled, diced
1 tsp thyme leaves, large bunch of flat-leaf parsley (about 50 g)
750 ml hot vegetable stock
Sea salt and black pepper

Additional supplies for cooking:
stockpot
Blender
Soup bowls

Celeriac and parsley soup recipe: How to make it

  1. Heat the oil in a soup pot over medium heat. Add the onion, garlic, celery, celeriac, and thyme with a generous pinch of salt and some pepper. Once everything is sizzling, reduce the heat to low, cover the pot, and sauté the vegetables for about 15 minutes, stirring occasionally.
  2. Meanwhile, pull the parsley leaves from the stems. (It's worth taking the time to do this, as it makes the soup silky smooth.)
  3. Pour the hot stock over the sautéed vegetables, bring slowly to a boil, and cover the pan, but don't close it completely. Simmer gently for 15-20 minutes, or until the celery and celeriac are tender.
  4. Add the parsley leaves, reserving a handful for garnish, and cook for a few minutes. Then remove the pan from the heat. Pour the contents of the pan into a blender and purée thoroughly until the soup is silky smooth; do this in batches if necessary. Thin the soup with a splash of hot water if it is very thick.
  5. Taste the soup and add more salt and pepper if needed. Reheat once the soup has cooled. Ladle into warmed bowls, sprinkle with the reserved parsley, and serve.
