RECIPE: How to make classic white asparagus

It's asparagus season again! That's why we're sharing several delicious recipes featuring asparagus on Your Little Black Book over the next few weeks. Are you team ham or team salmon? Or are you going vegetarian with just Hollandaise sauce? Classic and always a hit! This classic asparagus recipe is easily adapted for pescatarians or vegetarians!

A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. This is one of the best free outings in the spring! Did you know that you can gather (or pick, for the connoisseurs 😉) oysters yourself at various locations in the Netherlands? I’m in Zeeland for a bit this weekend, and if we can make it, we’ll go again. 📍In this video, I show you where you can fill your bucket. Recipe Classic white asparagus

Suitable for: 4 persons
You need:
1 kg white asparagus
800 g baby potatoes
250 g roasted ham
100 g Flora Plant
5 g tarragon
5 g curly parsley
½ lemon, juice and zest
Salt pepper

Classic white asparagus with ham recipe: How to make it

  1. Preheat the oven to 175°C (350°F). Place the ham in the center of the oven and bake for 45-60 minutes, depending on the thickness. Remove the ham from the oven and slice before serving.
  2. Halve any large baby potatoes and then boil them for 15 minutes until tender. Drain and put the lid back on the pan.
  3. Peel and trim the tough ends of the white asparagus. Place the asparagus, along with the peels and trimmings, in a large pot where they can lie flat. Cook the asparagus in plenty of boiling water with a pinch of salt, covered, for 10 minutes. Turn off the heat and let the asparagus cook in the pot for another 10 minutes.
  4. Meanwhile, finely chop the tarragon and curly parsley. Melt the Flora Plant in a saucepan over low heat and turn off the heat once it has melted. Add the lemon juice and zest and the chopped herbs to the pan and season with salt and pepper.
  5. Place 2-3 slices of ham on each plate and divide the white asparagus and potatoes over it. Finally, pour the herb butter sauce over the asparagus and serve immediately!
