Recipe: Smokey jackfruit gyros with creamy kohlrabi-apple tzatziki

A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. Recipe: Smokey jackfruit gyros with creamy kohlrabi-apple tzatziki

Suitable for: 4 persons
You need:
1 can of young jackfruit (550 g), rinsed
2 tbsp maple syrup
1 tsp dried parsley
2 tl dried oregano
6 tbsp smokey barbecue sauce + extra
3 tbsp olive oil
4 flatbreads
1 bag of mixed lettuce (. 80 g)
4-6 tbsp pomegranate seeds
1-2 tbsp sumac

Ingredients for gyros spices:
2 tsp cumin seeds
2 tsp coriander seed
Seeds of 1 cardamom pod
1/4 tsp black peppercorns
2 tsp thyme leaves
1 tsp garlic powder
1/4 tsp nutmeg
1 tsp cinnamon
1 tl paprika
1/2 tsp cayenne pepper
1 tsp salt

Ingredients for the tzatziki:
100 g coconut yogurt
2 tbsp tzatziki spices (dried parsley, celery, mint, garlic and oregano)
2 tbsp bruised mint leaves
1 small kohlrabi, peeled and sliced
1/2 sweet and sour apple, cut into sticks
1/4 tsp turmeric powder (optional)

Recipe Smokey jackfruit gyros with creamy kohlrabi-apple tzatziki: How to make it

  1. For the gyros spice mix, heat the cumin, coriander, and cardamom seeds in a skillet over medium heat for 1 to 2 minutes. Grind them with the black peppercorns in a mortar and pestle until powdery. Add the thyme and briefly crush the leaves. Mix in the remaining spices.
  2. Slice the jackfruit into thick, flat strips and toss in a large bowl with the gyro seasoning, maple syrup, parsley, oregano, barbecue sauce, and oil, stirring constantly to combine the marinade with the jackfruit pieces. Cover and refrigerate for at least 1,5 hours.
  3. Preheat the oven to 185°C (350°F). Spread the jackfruit pieces and marinade evenly on a baking sheet lined with parchment paper. Roast the jackfruit for about 20 minutes, or until crispy. Add a little more barbecue sauce if desired.
  4. Meanwhile, make the tzatziki. In a bowl, combine the yogurt with the tzatziki spices, mint, kohlrabi slices, apple, and turmeric (optional).
    Heat the flatbreads according to the package directions and spread them with half the tzatziki sauce. Top with the jackfruit and lettuce. Fold the bottoms closed with a piece of parchment paper or aluminum foil and sprinkle the pomegranate seeds and sumac on top. Serve the remaining tzatziki on the side.
