Recipe: Homemade snack: fried hummus snacks

Hummus has become increasingly popular lately, and we understand why. This delicious treat can be enjoyed in so many different ways. As a spread on bread, a tasty dip for your raw vegetables, or even in sauces. Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). Recipe: Fried hummus bites

Suitable for: 6 to 8 snacks
You need:
Leftover 200g fairly thick chickpea or bean hummus, at room temperature
240 ml sunflower oil, for frying
Lemon slices, sprouts, tamari and ginger sauce and/or grated radish, to serve

For the tempura batter:
70 g wheat flour, chilled
110 ml of ice cold water
¼ teaspoon turmeric
Salt, to taste

Additional supplies for cooking:
Guard
Baking pan

Fried Hummus Bites Recipe: How to Make It

  1. Make the batter by whisking the cold flour into the ice-cold water. Add the turmeric and salt and whisk quickly. Don't overbeat; it's okay for the batter to have lumps. For crispy tempura, it's crucial to use cold ingredients, don't overmix, and use the batter immediately.
  2. Heat the oil in a frying pan. Scoop the hummus onto a tablespoon and carefully slide it into the batter until it's coated all around. Scoop it out, letting any excess batter drip off, and carefully lower the hummus into the hot oil. Fry until the hummus is light golden. To prevent it from getting too dark, it's best to fry one piece at a time.
  3. Drain them on paper towels and serve immediately with lemon slices, sprouts, and a bowl of tamari and ginger sauce. Grated radish or daikon radish would also be delicious – they make fried food more digestible.
