Recipe: fregola with cockles, olives and pistachios by Sergio Herman

There's nothing more convivial than a table full of delicious food, drinks, and friends to chat with endlessly. In Spanish, they call this Sobremesa, and that's exactly what Sergio Herman's cookbook is all about. Dessert gives you a culinary tour of his Ibiza and creates a table full of delicious and colorful dishes with his recipes. Are you a shellfish fan like me? Then try this pasta recipe with cockles. Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). Recipe: fregola with cockles, olives and pistachios

Suitable for: 2 persons
You need:
100 g fregola
350 g cockles
50 ml olive oil
3 cloves garlic, finely chopped
Sea salt and freshly ground black pepper
100 ml of white wine
2 shallots, finely chopped
2 tomatoes, peeled, diced
2 tbsp green and black olives, chopped
2 tbsp salted butter
1 tsp chili flakes
1/3 bunch of flat-leaf parsley, coarsely chopped
1 bunch of chives, finely chopped
3 tbsp pistachios, chopped
1 lime, zest and juice

Recipe fregola with cockles, olives and pistachios: How to make it

  1. Cook the fregola in boiling salted water for 8-10 minutes until al dente. Drain and rinse under cold water. Meanwhile, rinse the cockles in plenty of water and let them drain.
  2. Heat half the olive oil in a pan. Add the cockles and garlic. Season with sea salt and black pepper. Deglaze with the white wine. Reduce the sauce by a quarter.
  3. Toss the cockles and add the shallot, tomato, olives, butter, 8 tablespoons of cooked fregola, and the chili flakes. Season again with sea salt and black pepper. Stir in the parsley, chives, and pistachios.
  4. Ladle the dish into deep bowls and drizzle with the remaining olive oil. Serve with lime zest and juice.
