Recipe: Grilled Shrimp & Pineapple Tacos

Hot and fast is the way to go! Small prawns on the grill need to be grilled hot and briefly. This way, you get that delicious charred edge without overcooking them, which can result in a tough result. The slightly sweet grilled pineapple and pistachio crumble, combined with the sweet and spicy prawns, make this a serious taco, so get grilling, Carbron!

A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. Grilled Shrimp & Pineapple Tacos Recipe

Fit for: 4 persons
Preparation time: Preparation 1,5 hours, cooking 15 minutes
Ingredients for Grilled Shrimp & Pineapple Tacos
2 tbsp butter
3 garlic cloves, coarsely chopped
4 tbsp ketchup
4 tbsp chipotle-tabasco
1 el soy sauce
500 g prawns, peeled
Salt and freshly ground black pepper to taste

Ingredients for the grilled jalapeño salsa:
5 jalapeños
1 shallot
2 tbsp green tabasco
juice of 1 lime
Salt and freshly ground black pepper to taste

½ pineapple, peeled and cut into 1cm slices
8 small tortillas
200 g guacamole
100 g feta, crumbled
2 tbsp finely chopped pistachios
2 tbsp coarsely picked coriander leaves
1 lime, in wedges

BBQ or grill for direct grilling cast iron grill grate

Grilled Shrimp & Pineapple Tacos Recipe: How to Make Them

  1. Melt the butter in a pan and sauté the garlic. Add the ketchup, chipotle Tabasco, and soy sauce and stir well. Let the mixture cool and marinate the prawns in it for at least 1 hour in the refrigerator.
  2. Prepare a BBQ or grill for direct grilling and heat it to 200°C (400°F). Halve the jalapeños, peel the shallot, and slice it in half. Grill the jalapeños and shallot until charred and soft. Finely chop, toss with green Tabasco sauce and lime juice, and season with salt and freshly ground black pepper.
  3. Grill the pineapple slices until they develop nice grill marks and the flesh is tender. Dice the grilled pineapple and set aside. Grill the marinated prawns on all sides until they are slightly pink. Be careful not to overcook them, as this will make them tough and chewy.
  4. Briefly heat the tortillas on the BBQ and fill them with the guacamole, grilled prawns, grilled jalapeño salsa, feta, pistachios and coriander leaves and serve with lime slices.
