Do you ever come to Antwerp? Then you certainly know restaurant Graanmarkt 13For years, one of my favorites in the city. In this blog, I share a delicious recipe from chef Seppe Nobels of Graanmarkt13 (where you can also stay very exclusively!) from the French cookbook Joie de Vivre. A delicious vegan eggplant recipe. A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. Of their grandmother's farm, of the flavors of their youth in Germany, and of techniques passed down through generations. @relaischateaux invited me to experience Sühring during a solo lunch, and this is truly my ultimate definition of culinary self-care. This was a surprising afternoon in Bangkok, where I ate the best German food I have ever tasted. And that in a city where I normally avoid European restaurants. I’m in Zeeland for a bit this weekend, and if we can make it, we’ll go again. 📍In this video, I show you where you can fill your bucket. Recipe Lacquered aubergines and tomatoes filled with mushrooms

Suitable for: 4 persons

Ingredients Aubergine Farcies:
6 eggplants
Pepper and salt
8 tomatoes
Olive oil
6 tbsp pear syrup
3 el soy sauce
Coarse sea salt
250 g mushrooms, chopped
½ bunch of young basil
1 tl dried thyme
1 tsp sesame seeds
Zest of 1 lemon
½ bunch fresh parsley, finely chopped

Aubergine Farcies Recipe: How to make it

  1. Preheat the oven to 170°C. First, make eggplant cream with two eggplants. Place them whole in a pan for 50-60 minutes. oven dish Bake in the oven. When they're done, cut them open and scoop out the insides with a spoon. Puree the flesh into a cream and season with salt and pepper to taste. Set aside.
  2. Now turn the grill to its highest setting. Place the tomatoes in a baking dish. Drizzle them with olive oil. Place them as high as possible under the grill, making sure the skins open.
  3. Halve the tomatoes, scoop out the flesh and reserve the empty tomato halves and the roasting juices.
  4. Preheat the oven again to 170°C. Cut one eggplant in half lengthwise for each person. Brush the halves with the pear syrup and place them in a large baking dishSprinkle with soy sauce and coarse sea salt. Bake for 25 minutes.
  5. Sauté the mushrooms in a pan in the tomato juices. Fill the halved tomatoes with the mushrooms and heat them in the oven for a few more minutes, alongside the eggplant halves.
  6. Spread the eggplant cream over the stuffed tomatoes. Garnish the tomatoes with basil leaves, thyme, sesame seeds, and lemon zest.
  7. Place the eggplant halves on a second plate and sprinkle with the
    parsley.
