Ranchi Amsterdam: Japanese sandwiches and korokke at the Albert Cuyp Market

Asian influences are everywhere in Amsterdam. Of course, we've known matcha for a while now, hojicha is making a comeback, we're used to mochi, and we're slowly discovering the delicious flavors of korokke. And we haven't even mentioned Japanese sandos – sandwiches. It was about time this delicacy made its way to our country! And along those lines, we have good news for fans of these snacks: at Ranchi Amsterdam, you can enjoy fantastic sandos and korokke, just like being in Japan, but at the Albert Cuyp Market.

Ambience and interior at Ranchi Amsterdam

While Sando's may be relatively new in the Netherlands, it's a go-to lunch spot in Japan. The duo behind Ranchi spotted their Japanese sandwiches online in 2020, forced to stay home due to the lockdown. Ideas were flowing, and so they started their own business selling these classic Japanese sandwiches, available for order via Instagram DMs and later through Café het Bruine Paard. It almost seems too good to be true, but the sandwiches created by brothers and entrepreneurs Sebastiaan and Christiaan have been a hit since their inception.

Ranchi's interior is simple and playful. Their mascot, a sandwich with arms and legs, appears in several places, including on the wall at the back of the restaurant. There's also a modest terrace facing the market.

Menu and dishes at Ranchi

In 2022, Parool already called Ranchi's sandwiches 'simple and perfect'. That still fits the bill today. Anyone who has ever had a chick katsu sandwich knows its irresistible taste and texture. The soft bread contrasts with the crispy chicken, as do the flavors: the slightly sweet bread somehow goes perfectly with the savory chicken. The XO beef, ton katsu, chicken salad and vegetarian katsu sando are also equally good.

The brothers initially made their traditional shokupan milk bread themselves (after all, they had all the time in the world), but they've since enlisted the help of a baker. It's still just as delicious as when it first started, but now available in larger quantities. Besides the popular sandwiches, they now offer equally popular side dishes: the loaded fries (more like a main course than a side dish) with red cabbage and lots of sauce are a hit, and the scoop of potato salad is a must-try.

You can linger, but Ranchi's lunch is also great for takeout. Order through Uber Eats or Thuisbezorgd, or place an online order for pickup. That way, you'll avoid the line ;-)

Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!). A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. Of their grandmother's farm, of the flavors of their youth in Germany, and of techniques passed down through generations. @relaischateaux invited me to experience Sühring during a solo lunch, and this is truly my ultimate definition of culinary self-care. This was a surprising afternoon in Bangkok, where I ate the best German food I have ever tasted. And that in a city where I normally avoid European restaurants.
