Do you know what I love about airports? They might just be the biggest hospitality and retail pioneers in the world. How did I come to that conclusion? Hospitality concepts from abroad often choose an airport to open their first local branch. We saw that at Schiphol with Starbucks, but recently also with Eataly and Wingstop. And the best local brands and retail concepts at a destination? You can often find those at the airport too. Sometimes I even check if a store has a branch at the airport, so I can save space in my suitcase for other 'souvenirs'.
Anyone who has been following me for a while knows that I don't like rushing. So I always make sure to be at Schiphol well over three hours in advance. I reserve a time slot for the security check, which means I get through that in no time, and before I know it, I'm sitting with a skinny iced latte in front of me, making plans for what to eat and what shopping I still want to do. The fact that there are so many great new shops and hospitality concepts to be found at Schiphol ensures that time literally flies by.

I can still remember the opening of the first Poké Perfect in Amsterdam so well. The poké bowl was on the rise internationally for those looking for a quick and healthy meal, and they were the first to bring it to the Netherlands. Fun fact: this is still one of my favorite work-from-home lunches whenever I order something. The good news? You can now also pre-order Poké Perfect at Schiphol and pick it up without waiting at the new location at Schiphol Plaza. They have tasty standard bowls, but I always go for the BYO (Build Your Own), where I swap rice for quinoa, add extra salmon, choose edamame beans, avocado, and seaweed, and top it off with sriracha mayo and their signature house seasoning. This store is a paradise for guilt-free shopping; they only sell brands here that focus on sustainability and social engagement. By 2026, that shouldn't really even be a question anymore, but concepts like UP TO DO GOOD are still frontrunners when it comes to making better choices. You no longer need to book a ticket to London for Wingstop's viral fried chicken. You can simply order it at Schiphol Plaza. This stop is perfect if you want to snack before security, but do you know when I eat it most often? When I get home from a trip! On my way to the train or the RideShare pick-up point, I make a stop here (very) often. Do you go for the classic chicken wings, or would you rather have the boneless wings or the tenders? I always claim the moment between security and boarding as me-time. No appointments, no to-do list, just time to shop really quietly. The next time you're at Schiphol, don't skip this large Today Duty Free store. It is an open secret that they carry brands like Le Labo, Charlotte Tilbury, Aesop, Caudalie, and Nuxe. A place where I've had a regular order since day one. I'm starting to see a pattern, but I truly believe you shouldn't just change a winning team. At Joe & The Juice, you can score the tastiest sandwiches that are perfect for breakfast and lunch, but could easily pass for an easy dinner too. I always order the Spicy Tuna with iced matcha. Even if you take them with you for a flight, I can give you the tip that their bread stays so deliciously crispy. I've survived many a trip on a budget airline thanks to them, haha. The word 'chain' can sometimes sound a bit negative when it comes to the hospitality industry. But not at Stach! I visit this lovely deli regularly, even when I'm not at Schiphol. Fortunately, you can find Stach in multiple locations when you're flying. The sandwiches are always tasty and change regularly. Almost everything they sell and use here comes from local suppliers. Do you know where to sit truly comfortably at Schiphol when flying internationally? At a table by the window at Kebaya. With a view of the planes arriving and departing, I always let my imagination run wild about what everyone is going to do. Before I know it, gyoza, a bowl of ramen, dim sum, or sushi is placed in front of me. After all, this is the place to sample Asian dishes from all corners of the world. If I need to have dinner at Schiphol, this is one of the places I often go to. I don't exactly frequent this place myself, but all my chef friends certainly do. Special moments are celebrated with cigars bought at ExQuisite. Incidentally, this is also the right place for special and exclusive cognacs and whiskies. I do occasionally shop for those there as a gift for my husband. My personal favorite when we fly intercontinentally and depart around or after lunch is without a doubt Bubbles. Anyone who follows me on Instagram probably already knows what my go-to order is ;-). A coupe of Ruinart champagne and a lobster roll. Believe me, this is truly the ultimate treat to start your trip. As soon as I take the last bite of my lobster roll at Bubbles, I start looking around. Where can I take a quick look before we head to the gate? The new luxury brand stores at Schiphol have turned out so beautifully, and sometimes they have items that are just a little different from those in the city. I always pop into Louis Vuitton, Gucci en Hermès. For inspiration, to see that one bag or scarf in real life, and sometimes, sometimes because I allow myself to buy an item that will last a lifetime.

Since my son got a little older, I often travel to a destination a few days earlier around the school holidays so I can do my work 'in peace' (read: visit twenty hotspots in a day). When I was recently in Bangkok and my boys were at the airport to fly to me, I received the sweetest photo of them together at the new location of The Butcher. Of course, I've known for a long time that their burgers are incredibly tasty, but having your son become a fan too is still a small milestone. The Butcher is a household name for good burgers, but it is much less known that you can also eat very good Eggs Benedict and other breakfast variations of this dish here at Schiphol. For me, a departure from Schiphol isn't complete without a skinny iced latte and a white chocolate donut for the plane. It has been my go-to ritual for years. Nice detail: Starbucks is back at the exact spot where the very first Dutch branch opened in 2007, and the coffee beans are roasted locally in Amsterdam. There are multiple Starbucks locations at Schiphol, but the one on the way to gates B, C, and D59-D87 has been completely renovated!
