A grandma's cookbook. Three Michelin stars. And a beautiful 70s villa in a quiet neighborhood in Bangkok, where you are welcomed as if you were at the chefs' home. The Sühring brothers don't cook based on trends; they cook based on memories. I’m in Zeeland for a bit this weekend, and if we can make it, we’ll go again. 📍In this video, I show you where you can fill your bucket. Recipe: mini quiches

Suitable for: 12 mini quiches
You need:
1/2 puff pastry recipe (see puff pastry recipe)
Filling of your choice 1 egg
100 ml cream
Salt and pepper
Flower, for the worktop
Butter, for greasing

Puff pastry ingredients:
250 gr flour
5 g salt
250 g butter, cold
125 ml cold water
Flower, for the worktop

Puff pastry recipe: how to make it

  1. Combine the flour and salt in a bowl. Cut the cold butter into cubes about 1 by 1 centimeter and work them into the flour with your fingertips. No kneading is necessary.
  2. Add the water and mix until well combined. You don't need to knead it yet; the goal is to keep the butter cubes in the dough intact. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Roll out the dough on a lightly floured work surface until its length is three times its width. Because the dough contains lumps of butter, you'll need a little more flour on your work surface than you would with regular puff pastry.

Mini quiche recipe: How to make it

  1. Preheat the oven to 200°C (400°F). Grease a 12-hole cupcake tin with butter.
  2. Roll out the puff pastry on a lightly floured work surface to a thickness of 2 to 3 millimeters and cut out circles that will cover the inside of the cupcake liners halfway up.
  3. Fill the pastry cases with the filling of your choice. Beat the egg with the cream and season the mixture with salt and pepper. Pour 1 tablespoon of the cream mixture into each case. Bake the quiches for 25 to 35 minutes. Remove the quiches from the cases and let them cool on a wire rack. Serve warm or cold.

With minced veal and mushrooms:
Brown 200 grams of veal mince in a drizzle of olive oil. Add 100 grams of sliced ​​wild mushrooms and cook briefly. Season with salt and pepper. Divide the filling among the ramekins and sprinkle with 150 grams of grated mature cheese.

With chicken and pesto:
Cut 250 grams of chicken thigh fillet into pieces and fry them for 5 to 10 minutes in a drizzle of olive oil. Halfway through the cooking time, add the finely chopped white part of 1 leek. Let the chicken cool slightly and then mix it in.
Stir in half the pesto recipe (see page 50). Season with salt and pepper. Divide the filling among the ramekins and sprinkle with 20 grams of pine nuts.

With shrimp and red pepper:
Sauté 1/2 chopped red onion, 1/2 chopped red bell pepper, and 1 to 2 cloves of minced garlic in a drizzle of olive oil for a few minutes. Let cool slightly and divide among the ramekins. Cover the filling with 24 cooked and peeled shrimp (about 150 grams). Season the cream mixture with 1/4 teaspoon chili pepper and 1 teaspoon fine mustard.
