1. Queso asado con mojo // local dishes in Tenerife 

This is fried goat cheese with palm honey and the famous Mojo! Mojo comes in red and green varieties. Green Mojo is made with green peppers, and Red Mojo with small red peppers (pimiente picona) and bell peppers. A must-try!

2. Papas Arrugadas con Mojo // local dishes in Tenerife 

On the island, they are crazy about potatoes, and especially wrinkled potatoes! The potatoes are super soft, and when you get them, it looks like they have powdered sugar on them. Nothing could be further from the truth, because that is the potato itself. Of course, you get green and red Mojo with them again, because they love that in Tenerife :-)

Cherne is the local white fish, and it is incredibly delicious. The fish is very tender and flavorful. When you order Cherne, you get vegetables on the side and often Papas Arrugadas con Mojo as well. Tasty!

Conejo al Salmorejo means rabbit prepared 'al Salmorejo'. Pieces of rabbit meat are marinated for 6 hours in salt, garlic, herbs, paprika, white wine, and vinegar. Afterwards, the meat is fried in olive oil and cooked in the marinade sauce.
