This is how you make the tastiest summer rolls!

Homemade summer rolls are the perfect snack for now!

Now that the sun is shining brightly, it's not just my wardrobe that's undergoing a transformation—I'm also adapting my daily cooking to the warm weather. And I happen to love Asian food. So many different dishes and flavors... delicious! Vietnamese spring rolls are definitely my favorite: so easy to make, so many different ways to prepare them, and a wonderfully light dish for warm days.

Unlike Chinese spring rolls, Vietnamese spring rolls aren't made with filo pastry, nor are they fried. They're made with translucent rice paper (which also creates a beautiful effect) and are eaten raw. Delicious finger food treats that can be enjoyed as a healthy snack or served with various sauces. A refreshing snack that's ready in no time!

Today we're sharing a delicious recipe for Vietnamese spring rolls. Looking for more Vietnamese finger food recipes? Then this cookbook is a must-have for you ;)

Spring rolls with avocado and shrimp

For this recipe you will need:

  • 8 rice sheets (available at the Asian store)
  • 12 peeled cocktail shrimp
  • 3 ripe avocados
  • 1 paprika
  • 1 large carrot
  • 1 spring onion
  • 2 handfuls of bean sprouts

Boil the peeled cocktail shrimp and let them cool in a small bowl. Cut the avocado, bell pepper, carrot, and spring onion into thin, long strips. Then, prepare your workspace: arrange the vegetables and shrimp around a deep bowl of warm water, along with a cutting board. Slowly dip a rice paper wrapper into the warm water (about 1 minute) until soft. Then place it on the cutting board and top it with the vegetables and shrimp, placing the filling horizontally at the bottom of the wrapper. Then roll up the spring roll—just like a wrap—and fold the ends inward. And voilà, you have truly delicious spring rolls!

Serve them with sweet and sour sauce, soy sauce, or spicy peanut sauce. Mmm, so delicious!
