Elysianne Amsterdam: here you can taste the flavors of New Orleans and Louisiana

Elysianne Amsterdam brings unique flavors to our country, and to Amsterdam East in particular. Since opening, they've been serving "forgotten dishes" from the region, blending the flavors of Cajun and Creole cuisine. This creates a unique fine dining experience you won't find anywhere else.

Ambience and interior at Elysianne Amsterdam

The interior of Elysianne Amsterdam is simple. Think: white tablecloths, woven chairs, minimal fuss, and simply cozy.

The name has a fun story: many New Orleans residents live their lives around Elysian Fields Avenue, once named after the Avenue des Champs-Élysées in Paris. Elysian literally means "beautiful," "special," and "peaceful." Something described as Elysian is considered divine and otherworldly. And that's exactly what Elysianne's dishes aim for.

Creole chef Matt Pace hails from New Orleans and has roots in the city dating back to 1700. He previously owned Cafe Booqoo in Brooklyn, New York, which received nothing but rave reviews. Meanwhile, Italian sommelier Jacopo Gallori knows his way around Creole and Cajun flavors and surprises with pairing wines from all over the world.

The rotating tasting menu (6 courses for €90, with a wine pairing costing €60) features, as you might expect, true classics from New Orleans and the surrounding area. As an appetizer, the Oyster Rockefeller is unlike anything you've ever tasted. Duck gumbo is a dish more familiar to the region: roasted duck in a unique sauce with plenty of herbs and dark chocolate.

Also a tip: the buttermilk Bouille (dessert) was nominated for the Favor Flavor Top 100 award. So go there quickly while it's still on the menu!

Just back from Catalonia and I thought: I'll share some tips right away. During our road trip, we stayed two nights in the Ebro Delta. An incredibly fun stop for families and foodies alike, where there is plenty to do. · A boat trip to the Musclarium is a must! Here you eat oysters and mussels straight from the farm, in the middle of the sea. · Admire the flamingos and black ibises that can be found here all year round. · Rice is grown in the Ebro Delta all year round. For paella, but Kensho also makes sake and miso from it! You can visit them during a tasting. · Cycling along the rice fields, canoeing on the Ebro River, and visiting various beaches. It was still a bit too cold now, but there is plenty to do. · The towns are very low-key and not that exciting, but you can find fantastic local food there. From the Michelin-awarded Les Moles* to local eateries like Vermuteria Bonmarisc and Lo Tinglado. We ate a lot of fish, but also anemone fritters (a first!).
