Chicken Puff Pastry recipe for pastry lovers ;-)!

This is actually a perfect recipe for an everyday meal! The puff pastry chicken is really easy and can be made really quickly.

Serve the puff pastry chicken with cabbage or grilled vegetables. Are you really hungry? Then make 2 per person. Otherwise, this recipe should be just enough.

Puff pastry chicken (4 persons)

– 4 puff pastry sheets;
– 2 chicken fillets;
– 3 eggs;
– 4 tbsp crème fraîche light;
– 1 tbsp sambal;
– (hot) chicken spices;
– (hot) paprika powder;
– big bag of cabbage;
– 1 cucumber;
– box of cherry tomatoes;
– 1 tbsp white wine vinegar;
– olive oil;
– 1 1/2 tbsp yoghurt mayonnaise;
– 2 tbsp (coarse ground) mustard;
– honey to your taste;
– pepper & salt; and
– 4 muffin cups.

This is how you make it!

Thaw the puff pastry sheets by taking them out of the freezer. Cut the chicken fillets in very small cubes and marinate with sambal, 1 tbsp of chicken spices, 1 tbsp of paprika powder and about 1 tbps of olive oil. Leave the chicken in the freezer for 15 minutes to let it absorb all the flavours. Meanwhile, pre-heat the oven for 200 degrees Celsius and cover the muffin cups with a thin layer of olive oil.

Take out the chicken after 15 minutes and cook it in a frying pan (no need for extra olive oil). Then mix the eggs, crème fraîche light and the (cooked) chicken. Fold a puff pastry sheet into each muffin cup and divide the chicken mixture in the four muffin cups. Easy enough right? All you have to do now is put the muffin cups into the oven. It takes about 20 minutes before the chicken puff pastry is ready.

While waiting, cut the cucumber in half and then half again so that they have a half moon shape. Wash the tomatoes and then also cut these in half. Finally, it’s time for the dressing. Mix the white wine vinegar, 2 tbsp olive oil, yoghurt mayonnaise, (coarse ground) mustard, honey and bring to taste with pepper & salt. Mmmmm, I love this dressing! Mix the dressing with the cucumbers and tomatoes, but leave the cabbage until right before serving to avoid it becoming all soggy (brrrrr).

Alrighty, the chicken puff pastry should be done by now. Take the chicken out of the muffin cups and place them on a plate with the salad. Enjoy!
