Anyone who has recently visited New York knows that caviar flows freely there. Not only in high-quality fish restaurants but also in ‘normal’ businesses. This way, you can add a dollop of caviar to your pasta or even fried chicken without a second thought. In short, caviar is hot! And at these Amsterdam restaurants, you can upgrade your dish with caviar – the black gold from the ocean.

Caviar is not called ‘black gold’ for anything; Sturgeon eggs are sought after worldwide. It works like this: the sturgeon is a protected fish species that takes ten to fifteen years to lay eggs. Caviar is the unfertilized egg of this fish, and because the sturgeon cannot be caught, caviar is often farmed.

The taste is unique and not comparable to any other fish egg, such as that of salmon – often used for sushi. It is, therefore, not surprising that caviar is used to enhance seemingly simple dishes. But where can you eat the best caviar in Amsterdam? We looked into it and ensured you are right with the six things below.


Troef best describes itself as a chic restaurant, with chef Raymond Plat (from 212**) at the helm. He likes complicated cooking, with lots of foam and unique flavors. At Troef, you can eat potato rosti with caviar as a starter, but you have also come to the right place for simple classics, from bitterballen to Caesar salads.

Restaurant 212**

Restaurant 212** is an exceptional experience in itself, you don’t even have to order caviar for that. The interior is simple, sleek, and modern, but they don’t shy away from a bit more fuss in the kitchen. Since 2021, 212** has no fewer than two Michelin stars, and they maintain their reputation. The menu includes no fewer than three starters with caviar, oyster ice cream, ventreche tuna, and potato ‘os amoele’ – all decorated with black gold.

The Duchess

The interior of The Duchess at the W Hotel is spectacular; massive, modern chandeliers, large clocks, and lavish stained glass make this restaurant an unparalleled place. The fact that they serve Spaghetti with Beluga Caviar only adds to their iconic status.

The White Room*

The White Room* on Dam Square is not only a stone’s throw from The Duchess, the large restaurant also has a similar atmosphere. Chef Jacob Jan Boerma is at the helm of this famous star restaurant, the oldest restaurant in Amsterdam. Keep an eye on their agenda, as they occasionally organize champagne and caviar gatherings at the weekend, and their regular menu also features caviar from Anna Dutch.

Bistro de la Mer* is located near De Juwelier*; both businesses have the same owners. This bistro, focusing on fish, has a bright interior, with a raw brick wall and wooden bar. The menu – as expected – features a lot of fish, some of which can be expanded with caviar. Also, save room for dessert: their grapes marinated in gin and tonic gratiné are a must.
