In between the lemon trees, somewhere on a beautiful piece of land on Ibiza, you will find Aubergine Ibiza. A few mint green chairs stand underneath a cane roof. Every detail is there: the pure white terracotta style building is mixed with the fresh colours of mint green. It has a clean, vibrant, pure and cosy vibe. Just like the food they serve.
If you like La Paloma, you definitely like Aubergine Ibiza. The restaurant serves organic food of the highest level possible. Everything that makes the table is fresh of the land, and wow…what a taste explosion! It already starts with the bread with aïoli. The aïoli has a pink colour, made from beetroot. Can we take some home?
Even the water is fresh: filtered on the spot so no chance for any air pollution to get in. The lunch is written on the chalk board and changes daily. It depends on what the land has to offer.
We try the Aubergine Pastry and the Ibiza Wok. It’s a surprise what it exactly is because there is not much explanation on the board. And the surprise is great, a sensation for our taste buds!
The eggplant is so tasteful, almost like we’re having a pizza- a healthy version of it. The rocket is hiding some vinegar balls, which give you a real taste explosion when you bite in them. Yum!
After lunch we bring a visit to the little store, which is as clean decorated as the restaurant. Here you can buy for example quinoa or lentils, or soap that smells like lavender. Everything organic, of course!
Aubergine Ibiza is a real recommendation if you’re a fan of good prepared food. Definitely worth a visit when you are on Ibiza.
