Nestled among the lemon trees, somewhere in a beautiful Ibizan countryside, lies Aubergine Ibiza. Under a thatched roof, a few mint-green painted chairs are placed. Every detail has been carefully considered: the pure white of the terracotta building is occasionally offset by the cheerful, fresh mint green. It's clean, cheerful, pure, and inviting. Just like the food served here.


If you like La Paloma, you'll also love Aubergine Ibiza. This restaurant serves top-notch organic food. Everything they serve is fresh from the farm, and wow… what a taste sensation! It starts with the bread with aioli. The aioli has a beautiful pink color because of the beetroot. We always crave that!

Even the water is fresh: filtered on the spot so no contaminants have been released into the air, for example, during transport. For lunch, we choose one of the dishes from the chalkboard. The menu changes daily, reflecting the local produce.

We decide to go for the Aubergine Pastry and the Ibiza Wok. What exactly we'll get remains a mystery, as there's little explanation on the plate. However, we're pleasantly surprised when our food arrives. Our mouths start watering immediately!

The eggplant is so flavorful it feels like we're eating pizza—but healthy. The arugula contains hidden vinegar globules, which deliver a little taste sensation with every bite. Yum!
After lunch, we pop into the shop, where the decor is just as clean as the rest of the restaurant. Here you can buy things like quinoa or lentils, or delicious lavender-scented soap. All organic, of course!


Aubergine Ibiza is highly recommended if you enjoy delicious, well-prepared food. Definitely worth a stop next time you're in Ibiza.
