In September, there will be a temporary extra star shining in Amsterdam. Arturo Dalhuisen is returning to the capital for a month. From September 3 to 30, the Michelin-starred chef will take over the kitchen of Gossler & Florin on Lindengracht in the Jordaan. Dalhuisen brings his signature pure yet bold flavors back to Amsterdam. The lunch or dinner menu, with respectively four or five courses and three bites, is now available for reservation.

Arturo Dalhuisenโs resume is filled with Michelin stars. Throughout his career, Dalhuisen has cooked at places like De Jonkman in Bruges (**) and as sous-chef at De Leest***. In 2016, he made a name for himself as chef de cuisine at The White Room*, where within two years he earned his first Michelin star with his signature style of fresh notes, light acids, and refined spices. From 2022, he led the kitchen at Voltaire* for over two years. Now, without being tied to a permanent kitchen, Dalhuisen finds his way back to Amsterdam, even if just for a short while.
All about the menu during the pop-up
In the pop-up restaurant, Dalhuisen offers a taste of how his culinary signature has evolved over the past years. Dalhuisenโs cooking is pure yet bold. A wafer-thin sliced scallop marinated with fleur de yuzu is served with slices of duck liver, crispy radish, and apple in a ginger-shichimi-tลgarashi syrup. Lightly brined and roasted halibut comes with fresh cucumber, light spicy tones of green curry with fried bok choy, and a mabrรฉ of eel, along with an airy remoulade.

From Tuesday to Saturday, the team serves a five-course dinner with three bites.
On Fridays and Saturdays, the pop-up also offers a four-course lunch with three bites.
