10 x the most important food trends at the moment

If you’d ask us if food and happiness are connected, we would answer: yes! Here at Your Little Black Book, good and delicious food is something that makes our hearts race. That’s why we always love to share the nicest new hotspots and lists so you can discover the best food in Amsterdam and the whole world. For foodies like you and me, foodora researched what the 10 most important food trends for the upcoming years are going to be. They did this research together with their 8000 suppliers located in 10 different countries and they talked to food experts and Chefs from all over the world. Curious to know what these food trends are? I’ll tell you all about it in this blogpost!

10 food trends you want to know about

During the travels that I make for Your Little Black Book, I sometimes visit 12 cities in just a few months. By visiting a lot of new hotspots, recognizing new food trends becomes way easier. Like a few years ago, with the taco trend, an this time with the poké bowl hype. I saw it all coming! Now that foodora has made a list with the newest food trends, you don’t have to travel the world to find out what they are going to be.

A few years ago, I already ate one at the Smorgasburg market in New York, but the ramen burger trend is a trend that will only get bigger and bigger.

TREND 1 >> Burge(r)evolution

Once invented in Texas, and nowadays impossible to imagine a menu without it: the burger. Even a dish that has excited for so long already, gets changed all the time. There are two big trends at the moment.

  • The vegan twist: vegan burgers with different vegetable flavours like antipasti vegan burgers from Italy, or a burger from Vienna with a vegan schnitzel.
  • Burger inspired by Asia: A few years ago, I already ate one at the Smorgasburg market in New York, but the ramen burger trend is a trend that will only get bigger and bigger. TREND 2 >> bowls, bowls, bowls

You have probably already spotted this trend, but bowls are it right now! At many restaurants, they don’t serves dishes on plated anymore but in a bowl. Why? When you put food in a bowl, the flavours of the ingredients mix way better than on a plate!

  • Poké fever: experts from all over the world say that the poké trend and the healthy food trend are connected. This trend is expected to keep getting bigger and that other variations will appear too. Like a poké bowl with courgetti instead of rice.
  • The bowl 2.0: something that goes a little bit further is the edible bowl. Imagine this: no more bowls in restaurants that are made of porcelain, but edible bowls (for example made of bread) that are part of sweet or savory dishes.

TREND 3 >> Raw everything

Raw is the new cooked. Suddenly we see pizza, lasagna, falafel, cake and wraps appear in a raw version. Food entrepreneurs show that raw food is more than a raw ‘baked’ pie. With raw food, the flavours are better maintained than with food that’s being cooked. Also, the colors have a positive effect on the way you experience flavours. It’s not just veggies that should pop into your mind when you think of the raw food trend. Things like raw fish and steak tartare belong to this trend as well.

TREND 4 >> Fast food on the move

Fast food and slow food have always been rivals, but will it stay like this is the future? When it comes to fast food, there are two big trends.

  • Healthy fast food: if you want a quick bite, you don’t necessarily have to visit a hotdog stand. A big fast food trend is healthy fast food made of local ingredients. That’s something you also see in the list of healthy dishes that you can order online. We made a list of 17 healthy food delivery dishes in Amsterdam. Read it yet?
  • GSR: QS-WHAT? No, this isn’t a new app but it’s short for Quick Service Restaurants. Restaurants that guaranty a fast service and doesn’t let you stay for that long. The men is usually short, usually there is just oen specialty and the ingredients are as fresh as possible.

TREND 5 >> Pizza gone wild

Ook de pizza maak een revolutie door die je zelfs terug ziet in Italië. En dat terwijl Italianen over het algemeen toch vrij strikt zijn over hoe het hoort! Zo is er in Turijn een restaurant waar Chef Domenico Vulgare in zijn restaurant Fuzion de klassieke Italiaanse pizza in een Japanse fusion variant serveert. Denk aan pizza met zeewier!

Also the pizza has been going through a revolution which you can even notice in Italy. And that when Italians are usually quite strict when it comes to how a pizza should be like. In Turin there is a restaurants called Fuzion, where Chef Domenico Vulgare serves pizza in a Japanese fusions version. Think of pizza with seaweed!

TREND 6 >> the new type of restaurant

We zien het in Amsterdam al opduiken. Een nieuw soort restaurant. Namelijk een restaurant dat helemaal geen restaurant is. In de zin van iets waar je heen kunt gaan en kunt zitten om te eten. Steeds meer Chefs openen nu namelijk restaurants die alleen thuisbezorgen. Deze Chefs geloven er in dat eten dat thuisbezorgd wordt net zo goed moet zijn als eten in een normaal restaurant en focussen daarom alleen daar op. De voorspelling is dat het thuis laten bezorgen van eten straks ook weer een stapje verder gaat. Dan kun je het niet alleen meer thuis laten bezorgen, maar juist ook in het park of andere publieke ruimten. Handig nu er in het Vondelpark niet meer gebarbecued mag worden bijvoorbeeld!

We already noticed it here in Amsterdam. A new type of restaurant. A restaurant that actually isn’t a restaurant at all. It’s not a place where you can sit down a eat. More and more chefs open restaurants that only deliver food. These Chefs believe that delivered food should taste as good as food served in a restaurant, so that’s what they focus on. It has been predicted that food delivery will go one step further as well. Not just food delivery at home, but also in a park or other public places. Super handy now that you’re not allowed to barbecue in the Vondelpark anymore!

TREND 7 >> healthier than healthy with clean eating

In short, clean eating is eating whole foods or ‘real’ food that hasn’t been processed. Often this is vegetable food that has been processed as little as possible before it ends up into your dish, so all the good stuff maintains. This clean eating trend is all about eating in a way that is good for yourself, but also for the environment.

TREND 8 >> All about avocado

Can you think of a sandwich or (poké) bowl without avocado? I can’t! And it seems as if this trend isn’t going to end any time soon. Avocado restaurants, restaurants that only serve dishes that include avocado, have been opening everywhere in the world. In Amsterdam, one named The Avocado Show, will open soon. Entrepreneurs Julian Zaal, Ron Simpson and Jaimie van Heije are going to serve the most surprising avocado dishes!

TREND 9 >> Food is more than just food

Je zult het waarschijnlijk ook wel bij jezelf herkennen. Je eet echt niet alleen omdat het een dagelijkse behoefte is. Nee, je wilt alles weten van het eten dat je in je mond stopt. Waar het vandaan komt, hoe het gemaakt wordt en wie het heeft verbouwd. Ook zie je steeds vaker dat eten een echte food experience wordt die mensen samen brengt. En dat eten ook steeds meer een helende rol gaat spelen, bijvoorbeeld door de positieve bijwerkingen die het kan hebben op je gezondheid.

You have probably noticed this yourself. You don’t just eat because it’s a daily need. No, you want to know everything about the food that you’re eating. Where’s it from, how’s it made? Food nowadays is also a real experience that brings people together. And besides that, it is also something that plays a part when it comes to healing. For example because of all the positive effects it can have on your health and body.

TREND 10 >>Back to the roots

I saw this while preparing for a trip to Canada. A fine dining restaurant in Toronto that cooks dishes inspired by dishes the Indians made when Canada was just discovered. You also see this trend in a milder version. Some restaurants serve dishes that belong to the authentic cuisine of a specify country or area and stay away from all the other good trend. Going back to the roots! Think of that pasta you once ate in Italy or a traditional stew. Food that comes with great memories. Something you crave for every once in a while, just like me.
