7 questions to Joris Bijdendijk >> one of our favourite Chefs!

Sunday’s are for stories on Your Little Black Book. Today we ask Chef Joris Bijdendijk 7 questions about his Amsterdam! Who’s Joris? He was the Chef at Bridges* and now runs the kitchen als Chef at the new RIJKS. restaurant in the Rijksmuseum. You can also know him from the Food Film Festival where he created the pop-up restaurants the last few years. This young gun (he’s only 30) is born and raised in Amsterdam! His favourite dish is a chicken from the oven his mum and dad always make him. But what are his favourite spots in Amsterdam?

Favourite neighbourhood…

“I would love to move to Amsterdam East, close to the Oosterpark where there are so many nice bars and restaurants and of course the beautiful park. It’s so young and dynamic! My favourite addresses in East are Restaurant Merkelbach at the Frankendael house, the windmill in East and Artis (if you can still call that East!).”

One day I will do this in Amsterdam!

“A visit to the royal palace at the Dam square. I’m so curious what it looks like inside…” >> Me too Joris! Let’s go together!?

Best for shopping…

“The Nine Streets because there are so many small and unique boutiques there from proud entrepreneurs without mass production. Most of them are family businesses like Vermaat (who’s responsible for the restaurant concepts at the Rijksmuseum). I have so much respect for entrepreneurs and family businesses like that!”

Coffee talk

“For coffee I like to go to De Koffiesalon at the Utrechtsestraat. What I order? The cortado.”

Must eats!

The Lobby in Hotel V at the Nesplein, Toscanini at the Lindengracht and Snackbar Bird at the Zeedijk.”

My Hidden gems

“Cocktail bar Oldenhof at the Elandsgracht and restaurant Marius in Amsterdam West.”

“Travel on the Transsiberia express.”
