I LOVE… gazpacho!
Fresh and summer proof. And even better: very easy to make at home. Last week I had dinner at my friend Meike her place and at this delicious gazpacho. Here’s the recipe!
Gazpacho recipe – ingredients
6 persons
1 cucumber
1 big jar of red bell pepper on water
1 liter of vegetable juice
1 clove of garlic
Olive oil
Chili sauce
Pepper and sauce
Spring onions
Gazpacho recipe – how to
– Dice the cucumber
– Leak the bell pepper and dice it.
– Crush the garlic.
– Add all this to a pan together with the vegetable juice.
– Puree this with a immersion blender.
– Ad olive oil, salt, pepper and chili to your personal taste.
– Cut the spring onions into small rings.
– Sprinkle the spring onions over the soup before serving.
