This is how you make the best spring rolls at home!

homemade spring rolls are the perfect snack for now!

Now that the sun is shining, it’s not only my wardrobe that undergoes a transformation. I also adjust my daily cooking routine to the warm weather. And there’s where my love for Asian food comes in. So many different dishes and flavors, it’s just delicious! The Vietnamese spring rolls are definitely my favorite: this dish is so easy to makem can be prepared in so many different ways and is the perfect light dish for such hot days!

Unlike the Chinese egg rolls, the Vietnamese spring rolls are not made with filo pastry and they are not fried. Spring rolls are made with transparant rice sheets (which gives a nice effect) and they’re eaten raw. Delicious finger food which you can eat as healthy snack or can serve as bites during a get together with your friends. A healthy snack that’s easy to prepare!

Spring rolls with avocado and shrimps

You will need:

  • eight rice sheets
  • 12 peeled shrimps
  • 3 avocados
  • 1 paprika
  • 1 large carrot
  • 1 spring onion
  • 2 hands of taugé

Cook the peeled shrimps and let them cool off in a bowl. Cut the avocado, paprika, carrots and spring onions into thin, long strips. Make your workplace ready: put the vegetable and shrimps around a deep bowl with warm water and cutting board. Dip a rice sheet slowly into the water and leave it for about a minute, so that it will become soft. Place the rice paper on the cutting board and top it with vegetables and shrimp. You do this by placing the filling horizontally at the bottom of the sheet. Then roll the spring roll, as if it’s a wrap. Fold the ends, and voila, you’ve really delicious spring rolls! Serve with a sweet and sour sauce, soy sauce or peanut sauce. Hmm, so tasty!
