So good! These simple recipes for a picnic in the park are my favorite!

Summer is almost there and oh, I immediately feel like doing fun things with my friends. An afternoon on a boat or a spontaneous picnic, there’s nothing better than that! Today I will share three simple recipes for a picnic with you. Wake up the Martha Stewart in you and steal the show ;) !

simple recipes for a picnic: Watermelon salad with feta and mint

You need: a large watermelon – 300 gram feta – 3 tablespoons of lemon juice – 25 ml olive oil – 200 gram black olives – 1 red onion – 15 gram fresh mint

Watermelon is my go to snack during the summer; healthy, thrist-quenching and so tasty. This salad is fresh and light, perfect as a side dish during a picnic. Remove the seeds from the watermelon and cut it in small pieces. Crumble the feta, shred the onion and cut the olives and fresh mint. Take a large bowl and mix everything together with the olive oil and the lemon juice. Hmm, so delicious!

simple recipes for a picnic: Couscous with grilled vegetables

You need: 300 gram couscous – 1 red paprika – 1 orange paprika – 2 onions – 1 aubergine – 1 courgette – 2 cloves of garlic – 200 gram cherry tomatoes

This dish is not only delicious hot, but can also be served cold. It does require some preparation, so be warned ;) ! Preheat oven to 180 degrees. Cut the vegetables to small pieces and throw everything into a large plate. Add the garlic cloves; these are just for the taste. Sprinkle it with olive oil and place the dish for about 30 minutes in the oven. Put the couscous in a bowl and add boiling water. The water should come above the couscous for about 1 cm. Cover the bowl and let it rest for 10 minutes. Add the grilled vegetables. You could possibly finish the dish by adding crumbled feta before serving.

simple recipes for a picnic: Quinoa salad with smoked salmon and green asparagus

You need: 250 gram quinoa – 3 tablespoons of sundried tomatoes – 300 gram green asparagus – 100 gram smoked salmon – 2 teaspoons of lemon juice

This must be one of my favorite recipes for a hot summer day. Cut the sundried tomatoes to fine stripes. Rinse off the quinoa and prepare according to the instructions on the package. Remove the bottoms of the asparagus and wok them briefly, so they’re a little bit softer. Mix everything in one large bowl and voilá!
